Cook’s Illustrated quick polenta

3 3/4 cup water
3/4 tsp salt
pinch baking soda
1 Tbsp butter
2 oz. Parmesan cheese (1 cup)

Boil water
Add salt and baking soda
Pour in cornmeal
Stir, bring to boil, cover and simmer for about 20 mins.

rice cooker black beans

1 lb dried beans, soaked overnight
1 med. onion, chopped
1 med green or red pepper, chopped
1 or 2 fresh jalapenos, seeded and minced
1/2 teaspoon ground cumin
1 bay leaf
1/2 cup tomato sauce or salsa
2 quarts water
1 tblspn red wine vinegar

put everything except vinegar and salt in the rice cooker, and cook for 1.5 hours. (probably will need to be stopped manually.) Remove bay leaf.
