Cook’s Illustrated quick polenta

with one comment

3 3/4 cup water
3/4 tsp salt
pinch baking soda
1 Tbsp butter
2 oz. Parmesan cheese (1 cup)

Boil water
Add salt and baking soda
Pour in cornmeal
Stir, bring to boil, cover and simmer for about 20 mins.

  1. fffuuu forgot to write down how much cornmeal. I think it was 3/4 cup. Possibly 1 cup would work well according to these guys:
