Soba with peanut-sesame sauce

1 package green tea soba
2 carrots, julienned
1 zucchini, julienned
1/4 head green cabbage, cut into thin ribbons
Cook the soba and add the veggies–simmer till crisp-tender.

1 stalk green onions, snipped
1 large king oyster mushroom, cut into chunks and sauteed with ginger and garlic until browned and tender
1/4 cup dry-roasted peanuts

Sauce: mix together:
4 Tbsp peanut butter
4 Tbsp tahini
1 tsp toasted sesame oil
1 tsp tamari
1 tsp soy sauce
1 tsp mirin
Juice of 1/2 lime
1 tsp sugar
1 Tbsp flaxseed
2 tsp black sesame seeds
1 clove garlic, minced
Red chili flakes
1/4 cup water (I used the hot water from cooking the veggies)
