pumpkin sausage arugula pasta

A slight variation on a previous pumpkin pasta:

1 yellow onion

1 can organic pumpkin puree 

3 Trader Joe’s pork Italian sausages

3/4 bag Trader Joe’s arugula

1/2 box rainbow rotini

1/2 cup nonfat Greek yogurt

Fresh sage and oregano

Smoked paprika

Salt

Pepper

Cinnamon

Cumin

Nutmeg

Soy sauce

 

Saute chopped onion in grapeseed oil over medium heat till translucent. Squeeze sausages out of casing into pan and cook in pan until cooked through. Cook pasta in a separate pot in the meantime. Pour pumpkin into sausage pan along with herbs, spices, yogurt, and arugula, and cook till just warmed through and arugula is wilted. Drain pasta and add to sauce.
