shirataki noodle soup

Made a ramenesque soup for lunch that had next to no calories and surprisingly didn’t taste like total ass:

Boil a couple of cups of water with a large spoonful of miso paste. Add a drained/rinsed package of  shirataki noodles (I used normal ones, not the tofu ones), break one egg into the water once it returns to a boil, and cover with about a cup of torn kale leaves. Cover with a lid. Cook till egg is barely cooked through (yolk soft but not runny) and kale is bright green. Drizzle a bit of toasted sesame oil over the top and snip 1 green onion over the soup as well. Enjoy.

Followed up with a virtuous Fuji apple snack and preceded by a virtuous green smoothie breakfast (kale, collards, vanilla coconut milk, frozen bananas and strawberries, nonfat Greek yogurt).
