Kind of a mashup of zaru soba and bun and the best damn thing I’ve made in a while (also considering we’ve been out of town, so the crisper drawer was full of melted black cilantro and I had very little that was fresh and usable lying around)

1 bundle soba noodles

1 carrot, shredded/julienned (my carrot looked rather Seussian, elaborate pink curlicues growing out of the top)

1 large leaf curly kale, torn into pieces

1/2 red bell pepper, cut into thin slivers

3 Tbsp dry-roasted peanuts

Fresh mint, oregano, parsley, and green onions (most of these were from the garden)

1 package extra-firm silken tofu

Cornstarch

Salt

Vegetable oil

Dressing: 

Soy sauce

Sugar

Rose’s sweetened Key lime juice

Fish sauce

 

Boil the soba in salted water according to package directions and drain.

Cut the silken tofu into large squares and dredge in cornstarch and salt mixture. Deep-fry in batches. I used the frying thermometer and found you have to turn the stove up pretty high to get the oil to 350 degrees–I had it on 8, one notch down from the highest setting.

Mix the vegetables, herbs, peanuts, tofu, dressing, and noodles in a large bowl. Devour.
