Whole30, Day 6: Eggs and more eggs

Whole30’ing continues apace. Hung out with some friends in the evening and had a serious craving for a beer and a late-night burrito–had water and some eggs instead, respectively.

Brunch:

Scrambled eggs with zucchini, peppers, and onions

Coffee with coconut milk

Banana

Dinner:

Steak

Salad (romaine, arugula, redleaf lettuce, artichoke hearts, and vinaigrette)

Leftover zucchini spirals with turkey/ghee/tomato sauce

Late-night snack:

2 crispy-fried eggs with sesame oil, cilantro, sesame seeds, and red pepper flakes

  
Here’s what we had for brunch:

Scrambled Eggs with Zucchini, Peppers, and Onions

1/2 yellow onion, diced

2 mini bell peppers (red and yellow), diced

2 zucchini cores, diced

4 eggs

Fresh cilantro

Salt

Pepper

Red pepper flakes

Coconut oil

Saute the onions and bell peppers in coconut oil over medium-high heat. Add the zucchini and cook till lightly browned. Add the eggs, salt, red pepper flakes, and pepper, and mix together. Turn down the heat and cook, stirring, till the eggs are set. Sprinkle with fresh cilantro for serving.
