Whole30, Day 8: Apple Salad

My biggest revelation today was that you can put cut-up apple into a Mason jar salad if you shake it up to coat the apple with vinaigrette before adding the other ingredients! It didn’t look brown at all the next day, although it was maybe sort of soft. But that might have been the apple itself (the unreal crispness of Honeycrisps has spoiled me for all other varieties of apple, and these were Gala, I think)

Breakfast:

Banana

Coffee with coconut cream

Lunch:

Mason jar salad: vinaigrette, leftover roast chicken, apple, artichoke hearts, spring mix, romaine lettuce

Blueberries

Snack:

Cashews with sea salt

Coconut butter
